Lazy Girl Breakfast Casserole

Who doesn't love breakfast for dinner? It's our family's FAVORITE go-to for busy nights or when I'm just plain feelings lazy. INGREDIENTS: Five generous servings of vegetables – diced (I used onion, mini bell pepper and spinach) (other options, zucchini or broccoli) 4 links of Nitrate free chicken sausage (I used Member's Mark Chicken, spinach & asiago sausage) 12 eggs (preferably free range, cage free) 4 tablespoons of ghee (can substitute butter) Everything But The Bagel Seasoning salt and pepper to taste DIRECTIONS: • Pre-heat oven to 350 degrees • Grease bottom of 13x9 pyrex dish with butter • Place frozen spinach, diced veggies & sausage in bottom of a 13x9 pyrex baking dish

• In a large bowl, crack and beat the 10 eggs. • Pour over veggies & Sausage • Bake at 350 degrees for 30 minutes or until casserole turns golden on the edges. • Slice into 8 equal pieces I served this with pan fried potatoes for the kids & Mat. For my Mindfully Nourished crew you can use this with the potatoes for breakfast, lunch or snack. Skip the potatoes for supper. ❤️
