Have you EVER wanted to eat Raw Cookie Dough while binge watching OITNB?! I know I have.... and lookie here.... I AM! But I can do this without completely blowing my meal plan because, A.) these are CHOCK-O-BLOCK full of Superfood goodness. B.) they're vegan (although they don't HAVE to be if you don't want them to) which is good... b/c Imma eat ALL of these. SUPER easy, SUPER adaptable, and SUPER yummy!
Yields 1 serving (5 balls)
Ingredients 1⁄4 cup almond flour 1 scoop vegan cafe latte shakeology (you could use the vegan chocolate or vanilla depending on the "flavor" of cookie you want) 1⁄4 tsp sea salt 2 Tbsp nut butter of choice (I used Peanut butter) 1 Tbsp maple syrup 1⁄4 cup nut milk (I used unsweetened almond) Chocolate chips to top (if you're keeping it vegan, use Enjoy Life chips)
1. In a small mixing bowl, add the dry ingredients and set them aside.
2. In a microwave-safe bowl or on the stovetop, melt your nut butter with the maple syrup until they’re combined. Pour the nut butter mixture into the dry mixture and mix until a crumbly batter remains.
3. Add the nut milk a tablespoon at a time until a cookie dough remains, stir in chocolate chips. Enjoy immediately or refrigerate to thicken up. ***Be sure if you try it to TELL me and let me know what you think!**
