It's taco taco Tuesday at the Porter House! And OH NO!!!! We're out of taco shells and I'm not gifted at slinging homemade tortillas. So if you've seen the zucchini boats in pinterest, it's time to try some for yourself! They're so good and fun for the whole family! Ingredients: 3 medium sized zucchini, cut in half length wise
1TBSP olive oil
1lb ground beef (I prefer local grass fed) 1/2 onion, diced
1 green bell pepper, diced
1/2 cup "clean" green salsa (this is my favorite)
1 1/4 cup Monterey jack cheese
Himalayan pink salt
garlic powder
Directions:
1.) Preheat oven to 350 degrees
2.) Heat oil in skillet, saute onion & bell pepper until softened 3.) Add ground beef and brown meat with the onion and pepper. Season with salt & garlic powder while cooking. When the meat is no longer pink add in salsa. 4.) Stir, turn off heat.
5.) Cut the stem off of the zucchini and the little end. Using spoon, scoop out middle of the zucchini to make a boat shape (see photo). 6.) Spoon meat mixture into boats, sprinkle cheese on top
7.) Cook in oven for 20 mins.
