Conscious Cravings: Jack-O-Lantern Stuffed Peppers

I'm not a Pinterest mom. I like fun and I like fall. My first love is nutrition.


After we spent some time making our No Bake Pumpkin Balls, Eden asked if we had a dinner that was Halloween themed. I went into my files and found this stuff peppers recipe. It is a good one. The final presentation on this one is awesome.



Ingredients:

2 medium orange bell peppers, tops cut off and saved, seeds removed

4 large eggs

½ cup drained diced tomatoes

½ cup ricotta cheese

½ cup grated Parmesan cheese

1 tsp dried parsley

¼ cup baby spinach leaves

2 tbsp Parmesan cheese to garnish


Directions:

  1. Heat oven to 375 °F.

  2. Prepare peppers by slicing the tops off and cutting out the eyes and mouth.

  3. Cover the peppers with water in a large saucepan. Bring to a simmer and cook 3-4 minutes. The peppers should be softened just a little. Remove from the water and place in a baking dish.

  4. In a small food processor, blend the three cheese, eggs, garlic powder, and parsley. My food processor is smaller than I would like so I did this in two batches, half and half, and then combined both fillings.

  5. Pour egg mixture into each pepper, filling just below the top.

  6. Place ¼ cup of the tomatoes & a few baby spinach leaves on the top of each pepper and stir with a fork, pushing them under the egg.

  7. Cover with foil & bake for 25-30 minutes or until the egg is set.

  8. Sprinkle with Parmesan cheese and broil for 3-5 minutes.
