So don't tell Hawaii but I'm actually REALLY not a coconut fan... but God has graced me with a family FULL of coconut lovers (and breakfast lovers too). Enter THE coconut french toast. The fam is totally obsessed with these. Give it a shot and see what you think!
Serves 2
INGREDIENTS:
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon coconut oil
4 slices sprouted grain bread
1/2 cup shredded unsweetened
coconut
1/3 cup sliced strawberries DIRECTIONS:
In a shallow dish, whisk together the eggs, vanilla, and cinnamon; set aside.In a skillet, melt coconut oil over medium heat.
Dip bread one slice at a time into the egg mixture, soaking each side.
Move the bread from the egg mixture directly to the coconut to cover both sides.
Carefully lay the bread onto preheated skillet and cook until golden brown on each side, about 2-3 minutes.
Slice toast diagonally and serve topped with strawberries.
