Chopped Chicken and Broccoli Apple Slaw

When I first started making changes in our lifestyle one of the hardest things for me was knowing what to bring to social events. I was notorious for bringing the traditional mayo laden salads or the decadent pies. But since there were MORE than enough of those to go around I had to start finding new things to bring to the pot luck. This slaw became an instant hit! And the best part is that it totally falls in line with your goals of staying healthy and fit!



INGREDIENTS:


2 tsp Avocado Oil Mayonaise

2 TBSP apple cider vinegar

1 tsp Dijon mustard

Salt & Pepper to taste

1 (13oz bag) broccoli slaw, approx. 3 cups - you can also shread broccoli using a food processor if needed.

1 small apple sliced into matchstick sized pieces

1/3 cup chopped cook chicken breast, approx. 2 oz ¼ medium red onion, sliced thin

1 large hard boiled egg, sliced


INSTRUCTIONS:


1.) to make dressing, combine mayo, vinegar & mustard in a medium bowl. Season with salt and pepper if desired. Whisk to blend, set aside.

2.) Combine broccoli slaw, apple, chicken and onion in a medium serving bowl. Toss gently to blend.

3.) Drizzle with dressing. Toss gently together to blend.

4.) Place sliced hard-boiled egg on top. Serve immediately.
