Big Mac Casserole

I try to keep my page upbeat, positive and encouraging - b/c that’s just who I am - #nofaking but the reality here Is that there is a battle raging between reactive health and preventative health. SO when I came across a post from the Louisiana State Health Department giving away free coupons for the first 500 (WHA?!) people who came to do Covid testing, I lost my crap. - it happens - I don’t know why I was so shocked. I had the vail pulled back and the dark secrets revealed to me when I was getting my Master’s Degree in public health & nutrition a few years ago. I was stunned back then to find out that the people you’re supposed to be able to trust with things that matter (like your health) don’t give a flying crap about your health. I know I shouldn’t have been surprised but I was. I wanted to believe that agencies like the CDC, WHO, state health departments, pharmaceutical companies, agriculture advancement agencies and the federal health administration really did actually care about your individual health. But SHOCKER… they don’t. So I don’t know why it would surprise me that a state health department would give away coupons for free Big Mac Meals if you came and got your nostrils swabbed… (NOT TO MENTION, it’s MASS testing, of people who may or may not actually have symptoms). I have stayed SUPER quiet about Covid testing, because I find that it is more divisive than it is helpful. But seriously guys. DO NOT BE FOOLED. People who are literally giving you coupons to get free FAST FOOD - fat, sodium, chemically manufactured laden “food” - that DIRECTLY correlates to obesity, high blood pressure, high cholesterol and diabetes DO NOT care about your health. They care about ALOT of things… but your health isn’t one of them. If they did perhaps as a HEALTH department they would place a heavier emphasis on preventative care - promoting HEALTHY eating, exercise and movement, stress management… LAWD JESUS come back already please! In honor of the geniuses who created this promotion I created a recipe that ACTUALLY does provide nourishment to your body. OH and in case you’re wondering… it costs less per serving than a value meal too.
