Chili Cheese Fries the Healthy Way

There is just something in my bones that CRAVES chili cheese fries sometimes. And you guys.... THESE ARE HEALTHY!!!! These are plan approved. Y'all I could eat these EVERY SINGLE NIGHT. PLUS you can make these as meal prepped as you want. I mean honestly you could throw these together in less than 20 minutes if you wanted to.

Serves 4

Ingredients:

Fries:

3 small sweet potatoes, spiralized (you can also use frozen GOOD QUALITY sweet potato fries to make this even quicker) Salt Pepper Garlic powder ****You can also use carrot spirals or turnip spirals for a lower carb option**** Skillet Chili: 1lb ground turkey 1 can reduced sodium kidney beans, rinsed 1 can fire roasted diced tomatoes 1 can green chilies (small can) 1 red bell pepper, diced 1 tsp cumin powder 1/2 tsp chili powder 1/2 tsp garlic powder 1/4 tsp pink himalayan salt Optionals: Cheese (I used Monterey jack) Avocado Greek yogurt Green onions

Directions: Preheat the oven to 415 degrees. Start the skillet chili first. This can also be meal prepped days in advance or make a huge batch and freeze it. Brown the ground turkey with seasoning and diced bell pepper. As the turkey is cooking pour in the can of tomatoes, green chilies and rinsed kidney beans (if this mix is getting too dry in the pan put a little of the bean water in there). While the chili is cooking, put tin foil down on a cookie sheet. Spiralize the sweet potato if it's not already spiralized. If you're using frozen sweet potato fries go ahead and throw them in the oven and get them baking according to the package directions. If you are spiralizing the sweet potato, drizzle the spirals with olive oil, sprinkle with seasonings. Spread them out on the baking sheet. Bake the spirals at 415 for 10 minutes. When the sweet potatoes are finished pour the chili over top, top with cheese. Crank up the oven to Broil. Put the whole baking sheet back in and broil for 7 minutes. Pull it out and BANG you're eating healthy chili cheese fries!
