Peanut Egg Roll in a Bowl


Did you know all Egg Roll in a Bowl recipes were not created equal? Last week I tired one and BLEH!!!! SO gross. This one.... perfection in a bowl.

INGREDIENTS:

1 lb lean ground turkey or chicken

1/2 yellow onion, sliced thin

2 cups shredded carrots

2 cups broccoli slaw (or cabbage)

3 cloves garlic minced

1/2 tsp minced ginger

1 tsp sesame oil

Sauce:

1 tsp sesame oil

1 tbsp peanut butter

4 tbsp liquid Aminos

1 tbsp honey

4 tbsp broth of any kind (I use vegetable broth)

Brown meat in large skillet and remove from pan.

Heat sesame oil and add onions, garlic, and ginger.

Cook for 5 minutes.

Add carrots and slaw and cook until tender, about 8 minutes.

While cooking, mix ingredients for sauce in small bowl.

Add meat back to cooking mixture and then add sauce over the top.

Cook for a few minutes until thickened.
