A few summers ago, I ran across one of those viral recipe videos on Facebook and thought I'd give their recipe a chance. I'm always looking for clean eating recipes that are easy and this def. fit the bill. I ended up making it my own (as I always do), but to give credit to the original recipe you can find it at Tastemade. This is the Nourish 927 version of a Summer Sorbet. Recipe: Ingredients:
1 ripe honeydew melon, or melon of your choice
1/2 cup coconut water (I used the one with pineapple juice in it too)
1/4 cup of honey
1 TBSP lemon juice
Preparation:
Cube melon & place on cookie sheet lined with plastic wrap.
Place in freezer for at least 2 hours
Place frozen melon, coconut water, honey & lemon juice in food processor
Blend until smooth (you may need to scrape the sides a few times)
Spread in a loaf pan lined with plastic wrap.
Re-Freeze for at least 1 hour.
Scoop & Serve
Keeps covered in freezer for at least 1 week.
This would easily be made with any other melon. Also for those of you following 21 day fix portions, 1 cup = 1 purple container.
