We aren't quite out of the winter woods yet here, so I've been craving some warm casseroley (pretty sure that's a real word) goodness. I honestly think if we didn't live in middle Tennessee I could totally be a pescatarian! Last year when I had the awesome opportunity to travel to Hawaii on a leadership retreat with my company. I literally ate NOTHING else other than acaí bowls and seafood. Our weather is finicky in late February so capitalizing on the cooler nights we do still have I wanted to cook up a quick soup!
