Sweet Potato Blender Muffins

I'm becoming a meal prep maven! I LOVE meal prepping and any recipe I can make that will feed my family for part of the week, SIGN ME UP! 

Is it healthy?

Is it whole food ingredients?

Can I make enough for 4 to last for 3-4 days?

This recipe is a YES to all of the above! 

Even better, you can customize it to what you have in your kitchen & YOUR family's personal preferences! 
 

 

 Sweet Potato Blender Muffins


3⁄4 cup baked sweet potato
2 ripe bananas
2 large eggs
1/3 cup almond butter
1 cup whole rolled oats
2-3 TBSP pure maple syrup
1 1⁄2 tsp cinnamon
1⁄2 tsp nutmeg
2 tsp baking powder
***additional add-ins - chocolate chips, nuts, grated carrot***

Instructions:
Preheat oven to 350 degrees. Spray or line 12 muffin cups. Place all ingredients, except baking powder,
in a blender. Blend until it’s the consistency of batter, scraping down the sides as needed. Stir in baking
powder. Pour evenly into muffin cups. Bake for 18-20 minutes.

Portion Fix Container count: 2 muffins = 1 yellow, 1⁄2 purple, 1 tsp
